Curried Chicken Salad (with Broccoli and Cashews)
I MADE THIS and it is really delicious! I was inspired by this Mock Curry Chicken Salad at the Whole Foods salad bar… it is super addicting, and I really wanted to try to recreate it at home.
Sooo I threw something together loosely based on the recipe you’ll see if you click through the photo (except I used all greek yogurt and no mayo for the dressing, tons more curry powder and mustard than called for, no celery, broccoli instead of asparagus and cashews instead of peanuts).
Here’s what my ingredients looked like, and I followed the same directions as the original recipe:
Dressing:
1/2 cup fat-free Greek Yogurt
2 T fresh-squeezed lemon juice (from a fresh lemon)
1 and 1/2 T curry powder
2 T Dijon mustard
1/4 tsp. sea salt (plus more to taste)
The Rest of the Good Stuff:
2 boneless-skinless chicken breasts
juice of 1/2 lemon
3ish cups lightly cooked broccoli
1/2 cup sliced green onion
1.5 servings roasted salted cashews
salt and fresh-ground black pepper (to taste)
I separated it into 4 servings (which I’ll probably have on a bed of lettuce like a big salad), and each serving only comes out to about 200 calories! WOOO!
